Pair with Del Rio Cabernet Sauvignon
Ingredients:
Really good potato chips such as Kettle chips
5 oz (more or less) of well aged Blue Cheese, such as
the Rogue Creamery’s Rogue River Blue
Preparation:
Place chips in an oven safe dish, as many as you wish to make. Sprinkle with blue cheese and place in over at 450 degrees until cheese is melted and chips are golden brown.
It sounds crazy, but it is yummy! Wonderful appetizer to serve with our Del Rio Cabernet Sauvignon.

2007 Cabernet Sauvignon
The Del Rio Cab was given a little attention from the Oregonian recently and we wanted to share more. Dana Tim suggested readers to visit Del Rio to taste the delicious Cab Sauvignon. The review states, "a standout here(Del Rio) is the 2007 cabernet sauvignon, and the charm of Del Rio's tasting room -- in the historic Rock Point State Hotel, built in 1864 -- means you'll savor every sip." Tasting Notes:
Our 100% estate grown Cabernet Sauvignon has a deep black currant color. Aromas of prune, raisin and smoked oak, with a touch of licorice notes. On the palate, this full bodied wine is well balanced, with good acidity and young tannins, showing its aging potential. The 2007 vintage benefitted from a late harvest exposing the grapes to cooler temperatures causing lower alcohol levels and structured acidity allowing for ideal flavor development.
