2007 Cabernet Sauvignon

The Del Rio Cab was given a little attention from the Oregonian recently and we wanted to share more. Dana Tim suggested readers to visit Del Rio to taste the delicious Cab Sauvignon. Tasting Notes:
Our 100% estate grown Cabernet Sauvignon has a deep black currant color. Aromas of prune, raisin and smoked oak, with a touch of licorice notes. On the palate, this full bodied wine is well balanced, with good acidity and young tannins, showing its aging potential. The 2007 vintage benefitted from a late harvest exposing the grapes to cooler temperatures causing lower alcohol levels and structured acidity allowing for ideal flavor development.

Food Pairing Suggestions:
Pair with steak or dishes with heavy butter cream sauce. We also recommend a variety of cheeses such as cheddar, mozzarella and brie. Even bitter dark chocolate will marry well with it. Enjoy now or cellar for the next 4-6 years.
